After several rescheduled dates for a theater-release, Disney’s “Mulan” live action film can be seen with premier access on Disney+ for $29.99 starting September 4th before its release to all Disney+ subscribers on December 4, 2020. I don’t know about you, but $29.99 sounds like a good deal to this mom and family of four! We can’t wait to see this long-awaited film of female heroism and strength! My children, aged 4 and 6 years old, have watched the animated “Mulan” and “Mulan II” on Disney+ more times than I can count, so needless to say, we will ALL be watching the film’s debut as soon as possible.

To celebrate the release of Disney’s “Mulan” live action film, I’ve created a fun viewing party menu! We tested the recipes out at home, and each passed with flying colors with my kids’ seal of approval. Mulan’s Morning Porridge

On the morning of Mulan’s first day of training, she is awakened by her self-appointed guardian Mushu with this friendly-looking bowl of porridge, also known as congee. Congee is a traditional Chinese breakfast porridge made with cooked rice. Mulan’s version of congee includes two eggs as eyes and a big slice of smiley bacon! This carbohydrate and protein combination is sure to fuel the little warriors in your home any day of the week and can easily be made in minutes. Try the recipe below!

Mulan’s Morning Porridge Recipe

Ingredients

1 cup cooked Jasmine Rice* (optional chicken broth, up to 6 cups)
Non-stock cooking spray
2 eggs
1 slice turkey bacon
Salt and Pepper to taste

Directions

  1. TIP* Save time by using a quick-cooking Jasmine rice like this one. Prepare according to package instructions and set aside 1 cup cooked portion into a bowl. If preparing dry Jasmine rice, mix one cup rice and 6 cups chicken broth (or water) in a pot on the stove. Bring to a simmer for 45-50 minutes, or until liquid is absorbed (do not boil). Traditional Congee is a mushy texture, but you can prepare your rice to your desired consistency.
  2. Spray a pan with non-stick cooking spray and heat over medium-heat. Gently crack eggs into the pan. Allow the eggs to lie flat and still. If you see any small bubbles in the whites, turn down the heat. Cook 3 minutes or until the whites are mostly set. Remove eggs from the pan use a thin spatula, and place on the rice in a bowl to create eyes. Sprinkle with pepper and salt.
  3. Re-spray the pan and place your turkey bacon in the center to allow to cook. Gently fold one side up to create a curved shape. Once cooked through, place bacon on top of rice in the bowl below the egg “eyes” and centered to create the mouth. Serve while hot with chop sticks.

For those of you unfamiliar with Frushi, our plate was inspired by the fruit sushi made with coconut rice, toasted coconut, fresh strawberries, and other delicious flavors served at the EPCOT International Flower and Garden Festival! While we didn’t recreate the EXACT recipe, we were certainly inspired enough from this delicacy to come up with our own unique FIVE rolls!

Cantaloupe Frushi

Ingredients

½ Cantaloupe, peeled and with seeds hulled out
¼ cup cooked jasmine rice
1 tbsp coconut milk
½ tsp honey
¼ tsp pure vanilla extract
2 tbsp chopped strawberries
2 tbsp chopped mango
2 tbsp chopped pineapple
1 tbsp shredded coconut

Directions

  1. Peel the outer skin off the cantaloupe and slice the entire fruit in half.
  2. Use a potato peeler to peel off long strips from the outside of the cantaloupe (the fruit just under the skin).
  3. Lay a bamboo rolling pad on a counter top and place a square piece of wax paper or plastic wrap. Then, lie cantaloupe slices vertically in a row, slightly overlapping one another to create your frushi wrap, on plastic wrap.
  4. Mix cooked rice, coconut milk, honey and vanilla together in a separate bowl then spoon mixture out in a horizontal row on the bottom 1/3rd portion of your cantaloupe “wrap.”
  5. Arrange your cut up strawberries and pineapple on top of the rice in a horizontal row as well. Roll the wrap starting from the bottom and gently pull off plastic wrap. Slice the toll into 5 or 6 pieces. Sprinkle with shredded coconut and enjoy!

Mango Rice Wrap Frushi

Ingredients

1 rice paper wrap
¼ cup cooked jasmine rice
1 tbsp coconut milk
½ tsp honey
¼ tsp pure vanilla extract
2 tbsp chopped strawberries
2 tbsp chopped mango
1 tbsp chocolate syrup

Directions

  1. Cook rice according to package instructions. Mix cooked rice, coconut milk, honey and vanilla together in a separate bowl
  2. Chop fruit into ½ – 1-inch strips.
  3. Submerge one rice paper wrapper in warm water a few seconds until it is completely soft. Remove it carefully and place onto a plastic wrap covered bamboo sushi mat.
  4. Cover the rice paper with a thin layer of rice and spread it around evenly, leaving the edges free from rice. Place the rice and fruit fillings in the center – first a layer of the rice mixture, then top with fruit strips.
  5. Lift the rice paper carefully and place it over the fillings. Roll gently but tight. Slice the frushi roll into 5 – 6 pieces. Drizzle with chocolate syrup and enjoy!

Banana Frushi Rolls – 3 Ways!

Ingredients

3 bananas, slightly frozen
1 cup natural peanut butter
¼ cup shredded coconut
¼ cup mini semi-sweet chocolate chips
¼ cup rainbow sprinkles

Directions

  1. Pour peanut butter onto a flat plate. Roll each banana into peanut butter until fully coated. Use a spoon or butter knife to help.
  2. Sprinkle each banana with toppings and slice into bite-size pieces. Serve while cold and enjoy!
