Green Smoothie of Te Fiti Disney at Home Recipe
Makes three 8-oz smoothies
4 ice cubes
1/2 cup frozen pineapple chunks
1/2 cup frozen mango chunks
1/2 banana (fresh or frozen)
1 clementine, peeled and seeds discarded
1/4 fresh avocado
1/2 cup frozen cut leaf spinach
1 cup unsweetened coconut milk
1/4 tsp vanilla extract
1/2 cup water
1 Tbsp shredded unsweetened coconut
- Add first seven ingredients into a blender in order listed, leaving out the liquids and shredded coconut.
- In a liquid measuring cup, add in the coconut milk, water and vanilla extract. Stir to combine then add to blender.
- Blend on smoothie mode for 1 minute, then on blend mode for 1 more minute. (Note: smoothie mode is same as blend mode but with periodic pauses to allow for solids to sink to bottom near blades and blend well throughout. You can do this manually if needed).
- Pour Smoothie into three jars and sprinkle with shredded coconut. Enjoy immediately while cold!
As a Dietitian, I am always finding tasty ways to sneak in important nutrients for my family. This smoothie is bursting with Vitamins A, C and K, as well calcium. It is hydrating and refreshing too! My kids are quite the picky eaters when it comes to eating greens, but once blended into this green smoothie, they fall for the fun bright color and the theme of Moana! Who doesn’t want to be just like this beloved Master Way Finder?
