Welcome back to Kingdom Kitchen! Today’s recipe celebrates the palette of everyone’s favorite reindeer Sven! “Who is Sven,” you might ask. Sven is the lovable and charming reindeer character in the 2013 Disney animated feature film Frozen and its 2019 sequel Frozen II. He is Kristoff’s loyal pet and best friend. As a reindeer, Sven is kept happy and fueled for adventure by a diet rich in carrots! This recipe, Reindeer Carrot Applesauce Loaf, is the perfect quick bread to prepare at home and enjoy as part of breakfast, as a morning snack, or even to serve at a festive holiday meal. We all know Sven loves carrots but adding applesauce into the mix serves many purposes. First, applesauce offers up sweet flavor, allowing you to cut down on the added sugar typically used in sweet bread recipes. Second, applesauce can also be used to replace or reduce liquid fats in many baked good recipes. You can simply replace the melted butter or oil with an equal amount of applesauce (tip: you may need to bake longer when using applesauce). And lastly, applesauce offers up nutrients to a recipe, like fiber and immune-supporting Vitamin C.

We love applesauce as a quick snack too! In my house, we keep stocked up on GoGo squeeZ. Not only is it a convenient snack made from 100% fruit, but it reminds us of runDisney races and snacking in the park since it is the Official Applesauce of Walt Disney World! Materne NA, the company that makes these fruity treats, sent me a generous case of a variety of flavors. I love to throw them in lunchboxes and our park bag for days at Disney, but lately I’ve been finding many uses for them in fun recipes!
Before we get to this reindeer recipe, let me offer up a few tips from my experience as a Dietitian in recipe development. You can use whole wheat flour, all purpose white flour or a 1:1 gluten free flour interchangeably to accommodate dietary preferences or to make this loaf allergy friendly. This Reindeer Carrot Applesauce Loaf will last a few days on the kitchen counter. If any is left (highly unlikely in my house since we eat it all up), you can store in the refrigerator up to one week. If you’d like to make ahead and enjoy later, this recipe can also be frozen for a longer shelf life (six months) and taken out to defrost when the mood strikes, like for a Frozen movie night!

Reindeer Carrot Applesauce Loaf Recipe Celebrating Sven!
Ingredients
2 eggs
2 pouches GoGo squeeZ applesauce
1/3 cup maple syrup
1 tsp vanilla extract
1 tsp cinnamon (+ ¼ tsp to sprinkle on top)
1 pinch of nutmeg
2 tsp baking powder
1.5 tsp baking soda
1 pinch of salt
2 medium carrots grated, or 1 can carrots, drained and diced
3/4 cup quick oats (+ 1 tbsp to sprinkle on top)
1 cup flour (all purpose, whole wheat, or 1:1 gluten free flour of choice)
1/4 cup cranberries
1/4 cup nuts chopped walnuts
Non-stick cooking spray
Directions
- Preheat oven to 350 F and spray a 9 x 5 loaf pan with non-stick cooking spray, then set aside.
- In a large bowl, whisk eggs until blended. Next, add in applesauce, syrup, vanilla, cinnamon, nutmeg, baking powder, baking soda, and salt. Whisk ingredients together until well combined.
- Add in carrots, oats and flour and gently mix. Fold in cranberries and walnuts.
- Pour batter into loaf pan and sprinkle with oats and cinnamon. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Allow loaf to cool for several minutes before transferring to a cooling rack to cool completely.

Once complete cooled, slice loaf and serve as is or with optional toppings like whipped cream cheese, butter, sprinkled confectionary sugar, or a dollop of whipped cream! Enjoy as part of breakfast or as a snack with GoGo squeeZ applesauce and carrots!
